There is a certain shade of orange, almost a reddish tangerine orange, that I absolutely love, especially now that spring is here (well, playing peek-a-boo really...).  As a pop of color from a bag or shoe against earth tones and white....as a billowy blouse .... as a bright lip, like here .... I'm on the lookout ....

sunday breakfast - french toast


I was so happy to have found this recipe, and have made it a few times already ... 
It's a healthy, satisfying take on french toast ...

Almond Banana French Toast 
2 slices whole grain bread 
1 tbsp almond butter
1/2 very ripe banana, sliced
1 egg
1 tsp milk
1/4 tsp cinnamon
2 tbsp raw almonds, finely chopped

Spread the almond butter on one slice of the bread and top with banana slices. Place the other slice of bread on top of the banana and press firmly.

In a shallow bowl, whisk together the egg and milk, then stir in the cinnamon. Place the chopped almonds on a plate next to the bowl of egg. Preheat a nonstick skillet on medium-high heat.

Dip the banana almond butter sandwich in the egg mixture. Flip and press firmly so the bread absorbs the egg. Once the bread is saturated, about 20 seconds on each side, place the sandwich on the plate of almonds.

Press the bread into the almonds so they stick well, flip and coat the other side. Place in the skillet and cook about 90 seconds on each side, until the bread and almonds are browned, all the egg is cooked and the sandwich is heated through. Top with a little maple syrup. Serves 1.

Greece is at the top of my list of places to visit -- the white-washed walls, the blue blue sea ...dramatic cliffs... how can it not be? This resort featured on 1 Kind Design is just stunning...such romance.

Pistachio Crusted Roast Salmon

I tried this recipe the other day, and made it along with Ina’s french lentils in her new “How Easy Is That?” cookbook.  There wasn’t any wild salmon available, so I actually tried it with chillean sea bass which was delicious.  Make sure you take the extra time to toast the breadcrumbs and pistachios – it brings out the flavor! Here’s a note on roasting times from source: My salmon filets were 1 1/4″ thick. I did them for 12 minutes in a convection oven at 375 degrees and they were perfect. For slightly rare salmon roast 11 minutes.

Serves 4
Ingredients
1 ½ – 2 pounds salmon, preferably fresh wild, skinned
2 tablespoons Dijon mustard
2 tablespoons unsalted butter, room temperature
1 tablespoon honey
1/2 cup unsalted shelled pistachios, toasted and finely chopped (if you use salted pistachios you may need less salt when seasoning your salmon)
1/4 cup Japanese Panko crumbs or unseasoned breadcrumbs, toasted
2 tablespoons finely chopped chives
2 tablespoons finely chopped fresh Italian parsley
Kosher salt and fresh ground pepper, to taste
Lemon wedges, for garnish
Extra Virgin Olive Oil or pistachio oil to drizzle at end
Directions
1)   Pre-heat oven to 400 degrees (375 convection)
2)   Carefully turn the salmon skinned side up and with a very sharp, thin knife (like a filet knife) trim out any dark purple areas. This is the salmon’s blood line and it can be strong tasting.  If you don’t mind that, you can skip the trimming.  Portion the filet into four pieces. Place filets on a foil covered rimmed baking sheet.
3)   In a small bowl, mix the Dijon mustard, butter and honey into a smooth paste. Set aside.
4)   In a small bowl, mix the pistachios, crumbs, parsley and chives.
5)   Season the salmon filets with salt and pepper to taste. Spread a little of the butter mixture on top of the filets. Coat the top of the filets with some of the nut-crumb-herb mix patting lightly. If you have extra of the herb crust mix it keeps for a few days refrigerated.
6)   Place the salmon in the oven and roast for 12-14 minutes, depending on the thickness of the filets.
7)   Serve with lemon wedges

Longchamp who? Longchamp was never a brand that caught my eye, until I saw Kate Moss in these beautiful, sun-drenched,  photographs for their S/S '11 campaign.  There is a naturalness to the photographs, as well as the natural tones and rich leathers of the handbags, not to mention Kate Moss, that drew me into them.  Those totes in images 2 and 3 would be great for little summer excursions no?

Cozy nights at home while snow falls outside are always welcome smack in the middle of winter... not so much towards the end of march when the promise of spring and summer warmth has tickled our skin .... soon, soon enough ... 


a beginning story

 
My parents met on the beach. My mom was babysitting her niece Lynda, who was 3 at the time. As my mom lay sunning herself on a blanket, Lynda ran off and found a cute guy. "Would you like to meet my aunt Mary Ann?" My father is a lover of lot of things, but a lover of children he is not. Annoyed and assuming this aunt was anything but glorious, he tried to shrug her off. Insistence at the age of 3 is a rare trait and one you cannot deny. So he eventually followed the small tot as she led the way to her beautiful, young, bronzed aunt. They've now been married just shy of 40 years.

A wise woman once told me she didn't believe in relationships that didn't have an interesting storied start. I believe I now feel the same way.
